What is that Horribleness!

The science of baking period can get crazy, throw gluten free in the mix and it turns into a whole new world.  
Everyone who can not eat gluten understands the trials of trying a new gf baked good.  Most experience the "Oh my goodness, what was that?!?" on a regular occurrence.  

Most would agree that there is a great deal of horribleness resting on the shelves of the local supermarket.  Very few companies can tell you they have the best, most wonderful product, but they can tell you they have product for you. 
 I think that is what annoys me the most.
Most people can walk into a store get an awesome baguette, or sour dough bread....maybe the pumpernickel,  or that yummy rye on the shelf.  
Gluten intolerant people pray that the store might have something that consists of the above, and then pray that it doesn't taste like sand paper when purchasing for double to triple the cost.  

Why do we need to suffer?

There is a lot of thought and energy that goes into the GF item(or should).  It's such a new process, and understanding the finer details when baking a product can become- well...very tedious.  
People give up on perfection, and deal with its the best we've got.

Noooooo......that's not good enough.

We deserve those wonderful baked goods just like anyone else.
I think that's why I am doing everything I can to make a good product that most would not be able to tell whether it is or isn't gluten free.  People deserve to just enjoy a baked good.  
We need good products available, and that's why small scratch kitchens in the gluten free community are so important.
Gluten free has to be fresh.  It need not taste like card board, and you should be able to find it in your own community.  
This community is growing.  My goal is to have a product that anyone can enjoy.  
So far I have 4 "wow that's gluten free" items under my belt.  With several others being tested right now.  A year from now I plan to have a full bakery list.  
Honestly, I cant wait for people to enjoy these items.  Fresh baked cinnamon rolls to order.  Another item I miss is a great sour dough soup bowl.  Can't wait to share my apple crisp, and great hamburger bun that you can actually get your mouth around.
