Stuck in the Middle of Gluten the Story of a GF Bakery

Let the Process Begin

Holy cow!  Opening a business is a lot of work, but in the end I think it will be worth it.  
Here's the story:
Six years ago I found out finally what in the heck was wrong with me.  The bloating, muscle aches, headaches, "fog brain"....which I call brain farts.  It hurt to walk, stand, think- let's just say life wasn't fun.  Then the knowledge of what I had- I seriously can't describe the emotion.  

How in the heck can this be possible?  

Celiac  Disease.....what in the world is this?
No gluten...no gluten?  Oh man!
You're serious. 
 
Yep, well research time.

I researched for about six months.  Ate the worst of things, and had some pretty good items.....but I missed my home baked items.  My fresh cinnamon rolls, sticky buns.  Man, I just want to bake.  What I found was a world of it "taste better than the rest",  "OMG, nooooooooo!", and the dreaded spit out.  Yuck!

Along the way I started understanding there had to be a better way than eating sandpaper cookies, and buns that could gag a horse.

Well, ladies and gentlemen welcome to my journey.  In 3-6 months I plan to start Stuck in the Middle of Gluten a gluten free bakery.  Everything I produce will be from scratch, and in small batches.  The goal is to start small, and really work on the process of my product- and you will join me on this journey through this blog.  We will test batch products with taste testings...learn new processes through techniques I learn, and establish good products that you will want to enjoy.

My product in the end will be available locally.  My goal is to have a small bakery that anyone can enjoy the food.  Whether gluten intolerant or just wants some good home baked products.

My product testing this year will include:

Cookies:
  • Chocolate Chip 
  • Peanut Butter 
  • Sugar Cutout and drop
  • Oatmeal Raisin

Breads:
  • Pumpkin
  • Banana

Muffins:
  • Blueberry
  • Lemon
  • Strawberry
  • Pumpkin
  • Banana
Yummies:
  • Streusel
  • Cinnamon Rolls
  • Sticky Buns
  • Apple Pie
  • Apple Turnover
  • Cobbler

My goal is to have taste tests with my local market.  There will be three to five different recipes tested.  the goal is to only have items that taste like the real thing.  The best of the best will be end product.

Consistency.  Taste.  Texture.  Would anyone buy it?  

Those are the main objectives.  Look for a new post weekly.
